This is our familys favorite cookbook (and we have a lot of cookbooks). Each recipe has the regular family recipe of 6-10 servings and also a group version for 50 servings. This book is unique, as
large-quantity versions
are right alongside the home recipes. An easy-to-read format and standardized procedures allow for consistent preparation of quality products. Servings, portion sizes, and pan capacities are included to aid you when cooking for roups. Understanding the capacity of basic kitchen equipment and how to schedule a staff allows planning for maximum efficiency.
The meals and menus encourage a proper balance between nutrition, good taste, eye appeal, efficiency in preparation, and cost control. It is my belief that people have different needs. They must decide what works best for them, so I would not begin to recommend a precise diet plan. God gave us everything to enjoy! But at the same time, there is the need for balance. I would encourage a focus on whole grains, vegetables, fruits, and beans (a high-fiber diet) over the processed foods readily available today.
Along with recipes using whole wheat flour and honey are variations on how to substitute white flour and sugar. This makes the book perfect for catering to individual needs and requests from almost any group.

About the Author
Kim Cahill, a native of the piney woods of East Texas, began testing recipes with her five younger siblings, then for excited neighbors and at church banquets. A graduate of the IBLP Culinary Arts School in Indianapolis, Kim now serves as head chef and food service director at the Riverfront Character Inn in Flint, Michigan. Her present responsibilities include planning and supervising plate-served banquet dinners and conference meals for up to 1,200, as well as daily meals for over 100 students and staff members. Kim also finds time for cello and violin ensembles as well as performing with the Flint Youth Symphony. Most of the cookbook recipes were developed, tested, and finalized at the Character Inn.
