Alaskan Oatmeal Bread

Combine in Bosch mixing bowl and let set about 5 minutes.

2 1/4 C warm water (110 degrees, this is important)
2 TBL Saf Instant Yeast
½ C honey (Dixie used Xagave)

ADD and mix in:

2 C whole wheat flour (freshly ground for best nutrition)
1 C unbleached white flour
1 C rolled oats
1 TBL salt
1 TBL butter
1/3 C olive oil
1 egg

KNEAD about 2 minutes in your Bosch mixer on speed 1 or 2 then add:

1 C unbleached white flour
1-2 C whole wheat flour (enough to clean the sides of the bowl)

KNEAD for about 8 minutes.

Leave in bowl to rise double (with loose cover). About 40 minutes.
Punch down or jog mixer for just a moment.
Place dough on oiled surface and divide into loaves in bread pans.
Make 3 slashes on tops with sharp knife and place in slightly warm oven.
Let rise until double, then turn on over and bake at 350 degrees until
golden 35-40 minutes or the internal temp is 190-200 degrees.
